Our little green shed is roadside, just before you reach the river at
the edge of Matakana village.
We operate a large commercial
smoker which takes up to 30 racks of product in a single smoke. The
process itself is labour intensive, and that’s the way we like it. Each
piece is handled and cared for, the smoke monitored and adjusted and the
end product measured and controlled.
Our ‘best of best’ value
endorses initiatives such as absolute minimum waste, so raw products
arrive in a smoke-ready state. A rocket within the chimney minimises
smoke nuisance to our neighbours and local community. And despite the
knowledge that smoke preserves, fresh is best to us, to experience as
much moisture and mouth watering flavour as possible.
We smoke a
minimum of 2 days a week to fulfil good food stores, cafes and
restaurants, and farmers market orders, as well as our small retail
showroom which services the local community.
We are also
available for contract smoking services to the hospitality industries.
